7-minute lunch idea: Tortellini Salad
February 02, 2016This tortellini salad has been a go-to since my older one was in elementary school (she's now a freshman in college). I have made it every week, shared this recipe so many times and it continues to be a hot favorite with everyone.
What I like about it is its versatility. There are endless way to dress up a tortellini salad -- this continues to be our favorite way for so many years. For this recipe, I use the five-cheese Seviroli tortellini that I purchase from Costco.
Serves 1
Ingredients
- 1 cup of Seviroli five-cheese tortellini
- 1 Tbsp of olive oil
- 1 tsp of Italian seasoning
- 1 tsp of crushed red chilly flakes
- I Tbsp of grated Parmesan
Process
1. Bring around 2 qt. of water to a rolling boil.
2. Add salt.
3. Add pasta, lower the heat and allow it to simmer until soft.
4. Drain water.
5. In a large bowl, mix olive oil, Italian seasoning and crushed red chilly flakes.
6. Add pasta, mix and serve.
Tips
1. Sneak in some veggies -- add cherry tomatoes, olives, artichoke hearts and capers.
2. Try adding some pesto for added zing.
